I love to cook, rather create! I love to buy cookbooks, but never use them. If I do use a recipe, I have to make it my own. I rarely bake, for this reason! You have to be precise with baking and I am neither precise nor enjoy conforming to anything!
Rita’s Coconut Pie
I made this pie, two actually, for a Fourth of July party. It is awesome!! My mother-in-law brought this over for Father’s Day and I fell in love. I rarely bake because it takes presion and I can’t be creative. I hate recipes. I love this pie, so here it is:
- Pie crust (I don’t make my own, but feel free!)
- 1 Cup Melted Butter
- 1 3/4 Cups Sugar
- 1 t Vanilla
- 3 Beaten Eggs
- 4 t Lemmon Juice
- 1/2 Package of Cocnut (14 oz bag)
Pre heat oven to 350. Mix everything, except Coconut. Add the coconut to the mixture. Pour pie filling into pie crust (in a pie tin or dish!) Bake at 350 for 45 minutes. Eat and enjoy!! Try not to eat the whole thing yourself. That’s ugly. Tempting, but ugly!

This pie is sooo delicious. I like it best when YOU make it. That way, all I have to do is eat and enjoy with no messy clean-up! :^)
