Culinary Creations

I love to cook, rather create!  I love to buy cookbooks, but never use them.  If I do use a recipe, I have to make it my own.  I rarely bake, for this reason!  You have to be precise with baking and I am neither precise nor enjoy conforming to anything!

 Rita’s Coconut Pie

I made this pie, two actually, for a Fourth of July party.  It is awesome!!  My mother-in-law brought this over for Father’s Day and I fell in love.  I rarely bake because it takes presion and I can’t be creative.  I hate recipes.  I love this pie, so here it is:

  • Pie crust (I don’t make my own, but feel free!)
  • 1 Cup Melted Butter
  • 1 3/4 Cups Sugar
  • 1 t Vanilla
  • 3 Beaten Eggs
  • 4 t Lemmon Juice
  • 1/2 Package of Cocnut (14 oz bag)

Pre heat oven to 350.  Mix everything, except Coconut.  Add the coconut to the mixture.  Pour pie filling into pie crust (in a pie tin or dish!)  Bake at 350 for 45 minutes.  Eat and enjoy!!  Try not to eat the whole thing yourself.  That’s ugly.  Tempting, but ugly!

  • This pie is sooo delicious. I like it best when YOU make it. That way, all I have to do is eat and enjoy with no messy clean-up! :^)
